Effect of high pressure on the proteolytic activity and autolysis of yeast Saccharomyces cerevisiae
2021, Innovative Food Science and Emerging TechnologiesCitation Excerpt :The activity of protease A was assayed using denatured bovine hemoglobin as a substrate. Several studies have reported the selectivity of the specified substrate towards protease A (Běhalová & Beran, 1979; Hata et al., 1967; Lenney, Matile, Wiemken, Schellenberg, & Meyer, 1974; Meussdoerffer, Tortora, & Holzer, 1980; Parr et al., 2007). For the production of the substrate suspension, 0.5 g of bovine hemoglobin (Sigma Aldrich, St. Louis, MO, USA) were suspended in 10 mL of deionized water.
