Foreword

European Research on the Functional Effects of Dietary Antioxidants (EUROFEDA) was set up under the European Union's Fifth Framework: Quality of Life and Management of Living Resources, Key Action 1 – Food, Nutrition and Health. The objective of the project was to identify the research necessary to strengthen knowledge about the effects of dietary antioxidants on health, with emphasis on improving the understanding of their functional effects at the cellular level.
